Today, while picking up some bacon at Greenpoint’s Polski Meat Market, I saw a giant loaf of babka ziemniaczana for only $3.99/lb. I’d never heard of it before, so I decided to try half a pound. It’s essentially a delicious potato casserole with ham, carrots and corn. There isn’t much information (in English) about it on the web, but I did uncover that it’s rather uncommon, and is mainly eaten in Eastern Poland and Belarus. Here’s a recipe.
